  • 2 medium potatoes (aloo), peeled and sliced thin

  • 2 medium bitter gourds (karela), sliced thin

  • 1 tsp turmeric powder

  • 1 tsp red chili powder

  1. Wash and slice the karela thinly. Sprinkle a little salt and keep aside for 10–15 minutes. Squeeze out excess water to reduce bitterness.

  3. Add onions and sauté until light golden.

  4. Add sliced potatoes and karela. Mix well.

  5. Add turmeric, chili powder, coriander powder, and salt. Stir and cook covered on medium flame for 15–20 minutes, stirring occasionally.

  6. When both vegetables are soft and slightly crisp, add garam masala and mix well.
