How to Make Aloo Samosa
Step 1: 

Prepare the Dough In a bowl, combine all-purpose flour, salt, and oil and mix well. The mixture should bind together when pressed in your fist. Now, add water little by little and knead into a firm dough. Cover the dough with a cloth and let it rest for 20-25 minutes.
Step 2: 

Prepare the Potato Filling
Heat some oil in a pan, add cumin seeds. Once the cumin seeds crackle, add ginger and green chilies. Now add mashed potatoes, peas, turmeric powder, coriander powder, garam masala, dry mango powder, and salt and mix well. Finally, add fresh coriander leaves and turn off the heat. Let the filling cool down.
Step 3: 

Shape the Samosas
Make medium-sized balls from the dough. Roll each ball into an oval shape and cut it in half. Fold one half into a cone shape, fill it with the potato filling, and seal the edges with water.
Step 4: 

Fry the Samosas
Heat oil in a pan over medium-low heat. Gently place the samosas in the oil and fry slowly. Once the samosas turn golden brown and crispy, remove them from the oil.
